Afternoon tea.

Earl Grey tea folded through a light, tender base of Japanese rice flour and organic cane sugar, baked in our dedicated gluten-free kitchen. Bergamot is delicate and easily buried, so we keep everything around it quiet. It gives easily, then the tea arrives. Light enough to have two, which is what usually happens.

A fine, tender crumb that breaks softly rather than snapping. Bergamot first, clean and aromatic, with a short finish.
